Taamara Veg Restaurant is part of Hotel Maurya at 22/4 in Gandhi Nagar 4th B Block. It’s a pretty traditional place where the chairs are heavy wood and the waiters have been here for years. You’ll see a lot of people who are staying in the hotel coming down for breakfast, still looking a bit sleepy. The kitchen starts early, grinding grain for the batter and getting the big pots of sambar going. It gets quite steamy in there. Gandhi Nagar is always crowded, so we get a lot of walk-in traffic from the shops nearby. The floors are stone and they stay cool even when it’s hot outside. We don’t have any music playing, just the sound of fans and people talking over their meals. Sometimes the service is a bit slow when all the tables are full at once, but we do what we can. The menu is written on a board near the entrance, and we change it depending on what’s available that day. We use a lot of stainless steel plates and tumblers which make a lot of noise when they’re being washed in the back. It’s a plain, honest place to eat without any of the extra stuff you find in newer restaurants. Most of the staff lives nearby, so we all walk to work. It feels more like a big kitchen than a formal dining room most of the time, and we prefer it that way.
