Rotighar Restaurant

Rotighar Restaurant is located in Basavanagudi, over at Ishwar Singh Nagar on Pakhwal Road 17. It’s a more traditional part of town, which we really like. The building we’re in is an older one, so it’s got high ceilings and some old-fashioned windows that let in the light. We spend most of our time in the kitchen. There’s always a lot of flour in the air because of all the dough we’re working with from morning to night. It gets on everything, even our clothes and hair. We’ve got a few big stoves that stay hot all day long, which makes it warm inside. The staff is mostly local guys who’ve lived around Basavanagudi their whole lives. We don't have a fancy waiting area; people just stand near the counter or sit on the benches we have along the wall. The street outside is relatively quiet compared to the main roads, but we still get a good amount of foot traffic throughout the day. We’ve got a rhythm down for how we do things. One person on the dough, one on the stove, and someone else handling the orders and the cash. It works for us. We don’t use any computer systems to track things, just some pads of paper and a pen. It’s a bit old school, but it’s how we’ve always done it here. Sometimes we run out of something and have to run down the street to the store to get more supplies. That’s just part of the day at number 17.
