Panch Phoron Restaurants

The name comes from the five spices we use in almost everything. We are over here in Koramangala VI Block, right near the Western Express Highway. It’s a loud spot. You can hear the trucks shifting gears all night long. We started this place because we missed the food from back home, the kind that uses a lot of mustard oil and pungent flavors. The kitchen is small, so we have to be very organized or we just bump into each other. We don't have a big menu. We just do a few things that we actually know how to cook well. Some people find the mustard smell too strong, but that’s just how it’s supposed to be. We don't water down the flavors to please everyone. The building is an old one, a bit of a chawl style, so it has its quirks. The plumbing acts up sometimes and the electricity flickers when the monsoon hits hard. But we stay open. We serve the people who live nearby and the travelers coming off the highway. It’s a simple setup with plastic chairs and plain tables. We don't spend money on decorations or fancy lighting. We’d rather spend it on getting the right kind of fish or the freshest greens. It’s just honest cooking for hungry people who don't mind a bit of noise from the road while they eat.
