We are based in Jayanagar, which is one of those neighborhoods that feels like it’s always been here. Our restaurant is a simple place with plain walls and sturdy tables that can handle a lot of use. We open up early to get the kitchen ready for the day. There is usually a lot of steam in the air from the big pots on the stove. We don’t use any fancy equipment, just the stuff that works and keeps on working. The staff is mostly local guys who have been working in food for a long time. We spend the slow hours between lunch and dinner sitting near the front, watching the people go by on the sidewalk. Jayanagar has a lot of trees and wide roads, so it’s a nice place to work. We get a lot of older people who have lived in the area for decades coming in, along with younger folks who are just passing through. Our menu is printed on simple paper and we don’t change it much because people like knowing what to expect. Sometimes the ceiling fan squeaks a little, but we just ignore it. We keep the floor swept and the water jugs filled up. It’s not a complicated business; we just show up, cook the food, and clean up when everyone is gone. It feels like home to us after all this time spent in the same Jayanagar streets every single day.
