At Mahadevapura 8, the smell of bread and sugar is pretty much part of the walls now. Just Bake is a small operation, really. Most of our day is spent looking at timers and making sure things don't burn in the back. It gets quite warm near the ovens, which is nice in the winter but a bit much in the middle of May. We see all sorts of people. Some are in a hurry, grabbing something for their kids, while others just want to stand and chat for a bit while they wait. The floor always has a bit of flour on it no matter how much we sweep during the shifts. We don't have a lot of space for sitting, so people usually take their stuff to go. The street outside is always under construction or has some kind of traffic, so we are like a little escape from that noise. We’ve learned over time which cakes people like for birthdays and which biscuits go best with their tea. It’s not a complicated business. We just keep the supplies stocked and the lights on. Sometimes we make mistakes, like a batch that comes out a bit too brown, but we try to keep things moving. It’s a job we enjoy, even if our aprons are always messy by noon. We’ve been part of this little corner for a while and know most faces who walk through the door looking for a snack.
