You can find Herbs & Spice Restaurant at HAL 3rd Stage on Hosur Main Road, specifically Govind Shetty Palya 39. Being right on the main road means there’s never a quiet moment. The noise from the buses and trucks is just part of the background music for us here. We’ve got a decent-sized space, but it fills up fast during the lunch hour. We’ve been working out of this spot for a while now. The kitchen staff has been with us since the start, so we’re like a small family. We spend our mornings checking the deliveries that come in from the local market. Sometimes the onions aren’t great, and we have to send them back with the driver. It’s those little things that take up most of our time. The interior isn’t anything fancy or modern. We’ve got some basic lighting and some pictures on the walls that we picked out ourselves a long time ago. The floors are easy to mop, which is good because people bring in a lot of dirt and dust from the street. We don’t bother with fancy uniforms; we just wear what’s comfortable for a long shift in the heat. It gets really hot in the afternoons, so we keep the fans going full blast to move the air around. People stop in because they’re passing through or they work in the nearby offices. We just try to keep things simple and do our jobs. It’s a lot of standing on your feet and dealing with the noise, but we’re used to it.
