Down here on Hosur Road in Pimple Saudagar, you’ll find Garma Garam Restaurant. It’s a small operation, just a few of us trying to keep things running. We don't have a marketing team or anyone telling us how to talk to people. We just open the doors and get to work. The street outside is usually crowded, and there’s always someone looking for a quick bite. We try to keep the tables wiped down and the kitchen moving. It gets pretty warm inside when the stoves are going full blast, hence the name, I guess. We didn't plan for it to be a big deal, it just sort of happened. We buy our supplies from the local markets and try to keep our costs down so prices stay fair. Sometimes we forget to update the chalkboard menu, or the chairs might squeak a little when you sit down. That’s just the reality of a small business. We don’t have fancy uniforms, just some aprons we wash ourselves. Most of our day is spent prepping and cleaning up. We don't have much time for anything else. If you stop by, you’ll probably see one of us sweeping the front or talking to the vegetable delivery man. It’s a regular life. We just keep the pots boiling and the doors unlocked for whoever comes in. We’ve been at this for a while and don’t see that changing anytime soon.
