Our place at Marathahalli Pimpri Road 90/4 is usually a bit of a mess in the mornings. Between the traffic outside and the steam from the tawa, it gets loud. I’ve been working the grill for a long time. You get used to the heat, but your wrists still ache after a few hours of pouring batter. We aren't trying to be the most famous spot in Bangalore. We just want to make sure the sambar is hot and the chutney isn't too watery. Some days we run out of batter earlier than expected and we have to tell people to wait. It’s embarrassing but it happens when you don't use preservatives to keep things sitting around for days. The floor gets a bit sticky from all the foot traffic, especially when it rains outside. Marathahalli is always moving, people rushing to work with their bags, and we are just here in the middle of it. We don't have fancy chairs or air conditioning that actually works well. It’s just a counter, some stools, and the smell of toasted dal. We’ve had the same regulars for years who don't even look at the menu anymore. They just nod and we know what they want. It’s a simple life. We keep the scrap metal from the old tawas in the back and just keep going. No big speeches here or trying to act like we are better than any other shop.
