Dilli Kitchen

Down here at Koramangala VI Bk 70, things move fast and it stays busy. Dilli Kitchen is basically just a small room filled with steam and the sound of knives hitting wooden cutting boards. Most mornings we are just dragging in heavy bags of vegetables and trying to find a place for everything in our small storage area. It gets really hot in the back when all the burners are going at once, but you get used to that after a week or two on the job. We don't really have a boss who walks around in a suit. It’s mostly just us shouting over the loud exhaust fan to get orders out to the people waiting. The floors get slippery if you aren’t careful with the water, so we’re always telling the new guys to watch their step. We’ve got a couple of old chairs out front that have seen better days. People come in from the street looking for something quick to eat, and we do what we can to help. Sometimes we run out of things before the day is over, which is frustrating, but that’s how it goes in a small kitchen. Koramangala is always busy so there’s always something happening outside the front window. We just keep our heads down and keep cooking. There isn’t much to the story of Dilli Kitchen other than a few people working hard at Koramangala VI Bk 70 to make sure the food is ready on time.
