Sahakara Nagar is where we decided to set up our kitchen, specifically at house number 36. It is a nice residential neighborhood with lots of trees and people out walking in the evenings. Our kitchen stays pretty busy from the late afternoon all the way until we close at night. You can usually hear the sound of the big exhaust fan running if you are standing out on the street. We focus on getting the food cooked as the orders come in on the printer. There isn't any big secret to how we do things here. We just use the same recipes we have had for years because that’s what people expect from us. Most of the staff has been working here together for a long time, so we have a good rhythm going. It makes the dinner rush much easier to handle when everyone knows their job. We get a lot of phone calls for home delivery. Sometimes our delivery guys have a bit of trouble finding the right house number when it’s dark outside, but they usually manage. The dining room isn't very big, but it has enough space for a few families to sit down and eat together. We keep the lighting a little bit low so it doesn't feel too harsh inside. We keep a stack of paper menus by the front door for people to take home. It's just a simple local business. We like the pace here most days.
