Our place is over in Srirampuram, specifically at Shahibaug 159. It’s a pretty straightforward setup where we focus on making biryani every day. The kitchen is where everything happens, and it gets hot in there with the big pots going. We start prep work early because the meat and rice take time to get right. It’s a small shop, so most people just order and take their food home, but we have some space if someone wants to eat right there. We don't use any fancy plating or have waiters in uniforms. It’s more about getting the boxes packed and making sure the packets of salan and raita are included. The neighborhood is busy, so there are always delivery bikes coming and going from the front. Sometimes it’s hard to find parking on this street, which can be a bit of a headache for customers. We’ve been at this for a bit now, and we just try to keep the quality steady so people know what they’re getting. There isn't much to the decor, just some basic tables and the menu board on the wall. We use a lot of spices and onions, so that’s the main thing you smell when you walk in. We stay open until the food runs out or it gets late. It’s a simple job, but it keeps us busy from morning till night. We just keep cooking.
