Our place is located in HSR Layout, specifically on 27th Main in Sector II. If you know the area, you know how crowded it gets around here with all the cars and bikes. We are at number 338. We focus on Rajasthani food because that is what we know. The kitchen is always a bit chaotic with the sound of pans hitting the stove and the smell of spices being roasted. We have a small team of people who work here and most of them have been with us since we opened up this spot in Bangalore. We don't really have a big corporate team or anything like that. It is just a kitchen where we try to get the flavors right like how they are back home in Rajasthan. The menu has the usual stuff like dal baati and churma. We spend a lot of time sourcing the right chilies and ghee because that makes the difference. Some days are really busy and we struggle to keep up with the orders, especially on weekends when everyone in HSR wants to eat out. We just try to keep the floors clean and the food hot. The address is a bit long on the documents but most regulars just know the landmark nearby. We have some plastic chairs for people to sit while they wait. It is a simple setup without any decorations or fancy lights hanging from the ceiling.
