Cantonese Canteen India Private Limited is based over in Naryanpur, working out of a space care of Nirmal Halder. It’s not a huge operation, just a small team of us trying to get this food business off the ground. We spend most of our time in the kitchen area or dealing with suppliers who come by. Naryanpur is a bit of a specific spot to find if you aren't from around here, but it's where we started. We do a lot of prep work every morning. It’s usually loud with the sound of pans and people talking over each other. We don't have a big corporate team, just a few folks who know how to cook and handle the books. Some days are slow, and some days we can barely keep up with what needs to be done. We focus on the Cantonese style because that's what we know best. It’s a lot of chopping, steaming, and making sure everything is ready before it goes out. It's honest work and keeps us on our feet. We aren't trying to be the biggest place in India, just a canteen where we serve what we cook. Being at Nirmal's place gives us a good base to work from. We just show up, do the work, and head home. It’s a simple setup and that’s how we like to keep it. We don't really have any fancy plans beyond tomorrow's menu.
