Shree Ji Wafers

You can find Shree Ji Wafers right on Dungarpur Road. It’s a busy route with a lot of trucks and bikes passing by all the time. Our place is basically a workshop where we spend the whole day slicing and frying. The smell of oil is something you never really get out of your clothes, but we’re used to it by now. We started small and stayed that way, focusing on just getting the wafers right. The peeling machines are noisy, and we have to keep a close eye on the temperature of the vats. If it's too hot, things burn. If it's not hot enough, they get soggy. We don't have a big corporate office or anything like that. Just a desk where we take orders and a back area full of sacks of potatoes and salt. The floor is always a bit slippery, so we have to be careful moving around. Most of our customers are local shops that send someone over to pick up crates in the afternoon. We don't have fancy packaging or big slogans. It’s just a simple setup where we work hard and hope the weather stays dry so the potatoes don’t go bad. The staff is just a few local people who live nearby. We keep it practical and don't try to be something we aren't. We just want to get through the day's batch and make sure the bags are sealed tight before they go out. It's a long day on our feet, but we like the work.
