Making cheese is one of those things that takes a lot of patience and a lot of cleaning. Most of our day is just spent checking on temperatures and moving heavy stuff around. It isn't a glamorous job by any means. It gets pretty damp and cool in the storage areas, which I guess is what you need for the cheese, but it’s not always comfortable for us. We started this because we wanted to do something with our hands. We don't have a massive factory; it’s just this building here on 5th Road. Sometimes the smell of the fermentation is quite strong, but you get used to it after a while. Our neighbors probably wonder what we’re doing in here all day. We use simple tools and try to keep things as straightforward as possible. There’s no big secret to it, just keeping everything clean and waiting for the milk to do its thing. Some batches turn out better than others, and that’s just part of the process. We don't spend much time on fancy labels or anything, just focusing on what’s inside the wraps. It’s a bit of a slow pace compared to the rest of the city, but that’s how cheese works. We’re just happy to be here doing this every day.
