Big Bay Bistros Llp is located in Pebblebay, right there on the 1st Main Road in RMV 2nd Stage. It’s a decent spot in Bangalore North where things are always happening. We spend most of our time in the kitchen area, trying out different recipes and seeing what actually tastes good. It’s not always perfect; sometimes a sauce breaks or we run out of a specific ingredient halfway through a busy afternoon. That’s just life in the food business, I guess. We have a small team here, and everyone kind of does a bit of everything. One minute you’re chopping onions and the next you’re fixing a wobbly table. We aren't some massive corporation with a manual for everything. We just do what makes sense at the time. The space at T5 isn’t huge, so we have to stay organized, or it becomes a total mess very quickly. We see a lot of the same faces coming through the doors, which is nice. It makes the long shifts feel a bit shorter when you can chat with the regulars. Sometimes the heat in the kitchen gets to be a bit much, but we just open the windows and keep going. We don’t have a big marketing department or anything. It’s just us making food and hoping people enjoy their meal while they’re sitting here. It’s simple, really. It gets loud and hot, but we like the work. There are always dishes to wash.
