The mill is located over in Mohalla Bhagwat Ganj, and you can usually hear the machines running before you even see the building. We spend most of our time dealing with sacks of rice and different kinds of dal. It’s a dusty job, honestly. There is always a layer of fine grain dust on the floor and the ledges, no matter how much we sweep every evening. At Shri Avadh Rice And Dal Mills, we just worry about getting the grains processed right. People from the neighborhood bring their stuff or come to buy what we have ready in the small bags. The machines are old and they make a lot of noise, so we have to shout sometimes to hear each other over the grinding. It’s not a quiet office job, that’s for sure. My hands are usually rough and dry from handling the burlap bags all day. We don’t have a big sign or anything flashy out front. Just the gate and the sound of the rollers. Sometimes the power goes out and we have to sit and wait on the wooden stools, which gives us a chance to have some tea and talk about the weather or the local news. It’s a simple way to earn a living. We’ve been in Bhagwat Ganj long enough that we don’t really need to explain where we are to anyone. Everyone knows the smell of the grains being worked on. We just keep at it, bag by bag, every single day. It’s hard work and the days are long, but it’s what we do.
