Fancyfood Multicuisine Private Limited is tucked away in Narayantala, near Sarisha. It’s a bit of a trek if you’re coming from the main parts of Diamond Harbour, but we like it here. Gias Uddin Khan’s place is where we base things out of. It’s a busy spot, especially when we are preparing different types of food. We call it multicuisine because we like to cook a bit of everything, depending on what we can get our hands on at the market. The kitchen gets incredibly hot in the afternoons, and there’s always the sound of chopping and pans clanking. We don't have a fancy menu printed on thick paper. It’s more about what’s fresh and what the local people want to eat. Sometimes we make mistakes, like a dish being a bit too spicy or a delivery being late because of the weather, but we try to fix it. Our staff is just a bunch of local folks who know their way around a stove. We spend a lot of time cleaning up after ourselves and making sure the ingredients are stored right. It’s not like a high-end restaurant in the city center. It’s a practical, local food business. We’re mostly just focused on feeding people and making sure the bills are paid at the end of the month. It’s hard work, but we genuinely enjoy the cooking part and the people we serve.
