Down in Dingelpota, in the Jayenpur area of Sonarpur, you will find our baking facility. It is a bit away from the main city center of Kolkata, which is actually nice because it is a little quieter. The address is in the 700151 area. We start our work when most people are still asleep. The smell of baking bread and biscuits fills the whole space by five in the morning. We have large ovens that stay hot all day, which makes the room quite warm even when the windows are open. We spend a lot of time mixing flour and sugar, and our clothes usually have a white dusting on them by lunchtime. It is hard work, standing on your feet for hours and moving heavy trays of hot goods. We have a few delivery vans that go out to different parts of the city. Sometimes they get delayed by the traffic near Sonarpur, but we do what we can. The building itself is simple and functional. We don't have any fancy decorations on the walls. There are just cooling racks and stacks of packaging material everywhere you look. We are just a group of people who know how to bake and we stick to that. It is a long day, but seeing the racks full of finished products makes it feel like we did something useful.
