It’s a bit of a mouthful to say the whole address, but it's C/O-Dinabandhu Roy, Vill-Purba Sonatikary, Po-Chandpara Bazar, Ps-Gaighata North 24 Parganas. It’s a real local spot. People around here know us as the place where you learn about hotels and cooking. We have a kitchen area that’s always smelling like whatever someone is practicing that day. Sometimes it’s onions, sometimes it’s something sweet. The building is simple, nothing like those big city schools you see in magazines. We have some wooden tables and a few old cupboards for the uniforms. It gets quite hot in the afternoons, so we have the fans running at full speed. Being in a village like this, we know most of the neighbors. They see the students coming in and out in their smart clothes. It’s a bit of a walk from the main road, but it’s quiet enough to focus. We spend time making sure the students know how to handle plates and talk to guests. It’s a lot of repetitive work, but that’s how you learn. We aren't a big corporation, just a small group of people running a training school in our own corner of West Bengal. It feels right being here.
