We’ve been running things from B.T. Road in Mullick Colony for a while now. It’s a busy spot in Kolkata, right near the Bikramgarh area and the number 71 landmark. Most days start early here because the brewing process doesn't really wait for anyone. You can usually smell the mash from down the street when the wind is right. We have a small group of guys who handle the vats and make sure everything stays moving. The office is tucked away at 207/34B, with the specific plot code Lp-1/68/4/2/2, and it’s usually piled with paperwork and logbooks. It’s not a fancy place, just a working distillery where people put in their hours. We deal with the local heat and the humidity like everyone else in North Parganas. Sometimes the machines act up or the delivery trucks get stuck in traffic, but that’s just how it goes. We spend a lot of time checking temperatures and cleaning out the equipment. It’s hard work and it gets messy, but we are used to it by now. The neighborhood knows us as the place with the big gate. We don't do much in terms of flashy stuff, just focus on getting the batches done. It’s mostly about keeping the rhythm going and making sure the bottles are filled correctly before the day ends. When we finish a shift, everyone is pretty tired, but the place is ready for tomorrow.
